There was one episode on Alton's Feasting on Asphalt where he eats BBQ pork ribs with pancakes.

His theory behind the mix is that the caramelization on the ribs is similar to the one on the pancakes, so it matches well.

I'm betting it's the same thing with chicken & waffles -- they both have that fried crust crispiness.
