I'm just really scared of him choking and the mess they make after. He tried having some steamed apples but got frustrated that he couldnt get any in his mouth

Ack just seeing this. Yes i did blw with my son. Its scary in the beginning but you get used to it. Gagging and choking are not the same and that is what scares people in the beginning
The gag reflex in a baby's mouth is at the front so when they roll food around in their mouth it will make them gag if they cannot handle it. Then they spit it out..

Most of my friends did baby led weaning. It is scary sometimes at first but the kids all did just fine.
You will always have a mess now, so you'll have to get past that. Its rough, I don't like a food mess either! Just put him over a tarp, lol. Take extra time to cut and/or steam so the pieces are smaller.
Just putting River in a highchair with food and sitting next to her while reading let her have the time she needed to start figuring it out, but kept me aware of her so when she did choke (because she's a
piggie and at 3 still takes too much in) I could reach in with a hook finger to get it out.

I did it. My daughter did eat purées but at 6 months we started BLW as well. She gagged a LOT. You just gotta let em do it. Gagging is fine, it's their way of learning how to work the food. And now
My daughter eats literally everything. She's one. People are always amazed that she basically has a mini plate with the same food as us. But it's SO much easier, in my opinion.
Also yes it's a giant freaking mess. I recommend putting an old towel or blanket under the high chair, and using old t-shirts as a bib because it covers everything.

Another important thing to remember: if your baby keeps refusing they are not ready to eat. Give it some time and try again.
First line of nutrition before one is always breast milk or formula. Food is a secondary thing at this point. So don't push or rush. It'll happen eventually!

In the beginning softer foods can help get things going. I would bake apples for Vincent. Not to the point of mush but easy to bite. There are websites

Peas! My daughter loved them and they were soft for her to gum. I thought she'd choke on a pea skin (is that a thing?) but she had no problem. Bananas are great starters. Also those peaches that are diced or
whatever, because they are really soft. And I second fries. My daughter strangely hates potatoes, but she loved being able to hold it herself.
River loved avocados. Just make the pieces small. She had fun trying to pick it up, smash, and eat them.
