We are having Christmas dinner with my brother, who lives 90 minutes away. He has a little kitchen and I don't want to rely on getting space in his oven to cook something when we get there.
I do have access to a refrigerator/hot box thing that plugs into the car's power port so I could keep something warm while we travel. Or we could always put warm bricks in a cooler.
Cheese balls. bruschetta. You can toast them over there, or you can grill the bread ahead of time, so it won't matter if it absorbs some moisture during transport. Salad with candied nuts or clementine bits, just add the dressing once you have arrived. Or good old nacho chips with home made toppings.
Salmon roll ups. Use tortillas, Boursain herbed cheese with smoked salmon on top. Roll them up and cut into slices. It's one of my favorite go to appetizers/party food. If you have a cooler for the ride then you're fine. Let us know what you bring
I would be more inclined to do something cold and keep it chilled in these circumstances from a health perspective. That is a long time to keep food in the danger zone for food borne illness.
