I cook soup on Sundays to serve when my best friend comes over. I am making avgolemono, which is delicious, but not a particularly filling soup, so I decided to make a couple side dishes. Roasted tomatoes & mushrooms and brunede kartofler (caramlized potatoes) though I don't make them exactly the Danish way as I roll them in herbs after I remove from the pan

I make it two ways. Insta- which is heating chicken broth, adding some rice. When ready, adding by ladling bit by bit into lemon/egg mix. But I prefer this recipe and usually make it (will for tomorrow) I have it saved in Paprika.BEST Authentic Avgolemono Soup Recipe | the Mediterr...

So I made the chicken vegetable part of the soup tonight. so tomorrow I only have to heat it up and then blend in the lemon egg mixture.
