If you like Mexican, you should be able to fit a chicken breast and a 1/2 can of tomatoes & chilis (Rotel is the brand I like). Then let it cook on low all day, or if you don't remember until afternoon, on high for 3-4 hours. By then the chicken should be easy to shred and you can use it as it, add chicken broth for soup, or cream cheese for a dip.
