melt a little butter over a low heat. crack in eggs. break them up with a spatula. cook slowly. add salt/pepper, and chives if you have them
the important thing is to add them to a fairly cold pan, cook them slowly, and remove them from the heat just before they're done
the residual heat will then finish them off without them going rubbery
and if you want to add any milk or cream, make sure it's at room temperature, not fridge temperature
