Love carrot cake!!

Ooh, nice.

The cake was fantastic! I actually wound up making it yesterday evening and then today we had some at supper time

(The kitchen was a bit busy in the morning)

It's a recipe from Susan Branch's notes from a vineyard cookbook and has been Mom's favorite since she bought herself the book

I neglected to take any before the sun went down so the lighting isn't great but

It's the style where you fill between layers and frost the top but leave the sides unfrosted

aaaa that looks good

it's really good! there's pineapple and raisins in it as well as the carrot

it mixes up easy and nice - though you have to be really careful with your pans because that much sugar rich vegetable matter really carmelizes and sticks to the pans on the bottom if the pans are just a little too large

these pans I used were larger than reccomended because I only had two (2) eight inch pans that are the right size, and I'd need three to fit the batter in that size -

so I did have a bit of a sticking problem with one layer, but I managed to glue it back together with cream cheese frosting.
