He doesn't. I mean, he did somehow go toe to toe with the Big Bad Villain of the first arc by himself canonically, but canon also insists that he's a really shitty mage, but a really good master
In gameplay terms the protagonist never actually fights and just uses support magic on the servants
In various adaptations the question of exactly how he fights on his own tends to vary. I think he actually does know a little combat magic in the Babylonia anime, but he still usually lets the servants do most of the fighting and just heals
I really need to actually read/watch some of that stuff XD;
The thing is that according to various servants throughout the game, it's exactly because he's such a bad mage that he's a good master, but I think that has more to do with the culture of mages in the Nasuverse and how that effects the way they're trained

Baring a few exceptions like Lord Ell Malloi/Waver and Aoko Aozaki who are seen as fringe weirdos
The other reason he's a good master is because he's so chill he can basically vibe with anyone, even if they're notoriously difficult to get along with or kind of on the evil side or if they'd previously tried to kill him before forming a contract with him, because he's just kinda like that.
Also he's got a lot of mana which is also necessary to be able to support an army of servants like what he ends up summoning, though Chaldea's special summoning system kinda helps manage some of that load too
That last part is part of what got him press ganged in the first place. Apparently this is something mages can tell based on a blood test
