I have all these really long fics I want to write, but I have the hardest time writing Long!Fic, especially ones in which there's not a ton of plot happening

Like, one of them is completly a growing up/coming of age/coping with shit story and that's like/????? The hardest???????????? Because it's literally just following someone's life and ?????????????????????????????????????? How do you write that.
