You know, even if you don't watch Supernatural anymore, but used to be into it, you should go watch episode 300. It's literally something that's satisfying even if you only watched season 1, but definitely the first 5.

you've not missed much worth watching
but 300 is still good, and you should be able to ascertain everything that happened related to the episode

Castiel does get patched back together, but frankly I don't blame you, s6 and 7 were just awful.
It's worth it to come back for the Mark of Cain/Darkness storyline as it involves Chuck
and feels about as good as s4-5 did
but otherwise tbh you're really not missing much stopping there, and there's barely anything in 300 that will have changed
Though if you're looking for single episodes that were worth watching, Scoobynatural was a wild ride that I recommend

Really, there's like one to two comedy/spoof episodes a season that are usually worth watching even if the whole rest of the season can go in the bin
Like the French Connection and My Heart Will Go On
The one where Dean loves slasher films and Sam is like 'Dean why, that's our life it isn't funny' was also kind of amusing
