I wasn't sure if I should call them ribbons or shavings. But thanks! I sat on the couch with the carrot peeler trying not to shave my nails while I worked and feeding the thin leftovers to my sister. She said she felt like a gerbil getting fed treats XD

I'm still trying to get ganache right. It came out pretty thick this time. Last time I tried I put it on while it was still too warm and it just sort of slid off LOL

one of my professors recommended using chocolate glazes at around 29c, so it sets quickly but isn't too runny?

If the cake is a bit colder, you can bring it up to around 32c too!
