it's elk steaks that have been rolled in egg wash and then flour, salt, pepper, paprika, garlic powder ... whatever seasonings you want. I used cumin too

the fried steak and potatoes thing was what we ate almost daily at home . .. but our elk and deer steak tended to be little pieces. these are legitimate steaks
