Syllabub just makes me goggle! Also 'fool'.

fool is awesome. pity I can't eat the cake part. Syllabub is like a character in A Midsummer Night's Dream. (Which I said on the blog.)

What about using flourless cake in one?

re over-beating, I suspect the concern is if you get it to the point where it turns to butter. Have you done that before? I'd suggest trying it sometime, with the aim of getting butter, but watching

the consistency closely as you go. Then aim for just short of butter if/when you try the syllabub again.

that's what "mousse-like" would be in my mind.
