being adventuresome with the new convection oven. Never thought I could get chocolate chip cookies to taste like communion wafers, but I did. maybe adjust the temperature and chill the butter?

lower the cooking temp and time when using the fan.

I pretty much cook everything on 350 or lower with the fan running, and shave off up to 20% of the cooking time. I also do not pre-warm the oven.
