My bff's dad gave me an eggplant from his garden today. It's not a very big one, but it's an average, round size, and I am now trying to figure out what to make it into tomorrow for dinner. Any ideas?
And yes, I am well aware of eggplant parm, but I wanna try something different.
I put it in chili. It's just gorgeous in chili.
Eggplant tempura is amazing too, though.
Or my husband makes a veggie moussaka where he uses the eggplant instead of lamb.

Well, we ended up breading and baking the eggplant, and making tzaziki sauce with it, and it was good.
yum!

The moral of this story is: everyone eat more eggplant. It's yummy and looks like a dragon's egg. What's not to like?
