As long as I burn 500 calories a day thru exercise, I could actually keep myself from going diabetic & actually still get to enjoy food. Feeling hopeful but the real challenge is to keep it up!

500 is a pretty easy goal. I think you should be able to achieve that no problem. Here is a site that tells you the calories per hour burned doing just regular life stuff. www.caloriesperhour.com/...
