I'll let katiebear answer, but I believe it is an intense chocolate with cherry syrup/coloring added to the mix.

if I've only had poor imitations, then. Hmm...

It's possible that there are just lots of different variations. The kind I've had is mildly chocolate, with no cherry flavour.
