On Tuesday, I baked two cheesecakes for the staff holiday luncheon (no leftovers). on Thursday, I baked two more for the ESL study hall parties (no leftovers), Today I am baking FOUR more for my dad's friends (I'm being paid), and tomorrow I'm baking two more for the family Christmas dinner.
Ten cheesecakes in a week. each batch yields two but takes two hours (bake and cold oven resting period).
that's a lot of cheesecake. Because, yes, it takes hours. And it's just a lot. Impressive. Really should be called Cheesecake Pro, or something, after this.
